Indian Onion Relish

This relish is a tasty accompaniment to samosas and curries. If using a regular yellow onion, increase the sugar to one teaspoon. This relish can be refrigerated in an airtight container for one day.


  • 1 medium Vidalia onion, chopped fine (about one cup)
  • 1 tablespoon juice from one lime
  • 1/2 tsp. sugar
  • 1/2 tsp. sweet paprika
  • 1/8 tsp. salt
  • pinch cayenne pepper

Preparation:  Mix all ingredients together in a medium bowl. This relish is even better if you allow it to sit in the refrigerator for a few hours to allow the flavors to meld.
