Oven Roasted Cherry Tomato Sauce
This sauce works well both on pasta and as a pizza sauce. For an even more intense roasted tomato flavor, I added a half cup of chopped homemade sun dried tomatoes before processing the sauce. If you find your tomatoes are slightly tart or just lacking in sweetness (as is often the case with tomatoes in the winter), you can adjust the flavor of your sauce with a little sugar.
This recipe makes 3 cups of sauce.
Ingredients:

  • 4 cups of tomatoes cherry tomatoes (stems off)
  • 1/4 teaspoon onion powder
  • 2 tablespoons olive oil
  • 1/3 cup fresh basil
  • 1/2 teaspoon garlic powder
  • salt and pepper to taste

Method:
Preheat oven to 425 degrees.
Spread tomatoes single layer in a pan. Drizzle with olive oil and sprinkle with onion powder. Bake for 35 minutes- the tomatoes’ skins should be wrinkly and lightly browned.
Let the tomatoes cool for a few minutes, then put in food processor along with fresh basil, garlic powder. Blend until smooth and creamy, and season with salt and pepper to taste.
You can use the sauce right away, or throw it in the fridge to use tomorrow, or freeze it for next month.
